Collection: White1

White 1 (Shirogami 1) is a very pure Yasugi carbon steel with a high carbon content. It is harder than White 2 and takes the keenest edge of the whole White and Blue family, with a clean, crisp feel on the stones. It is slightly less forgiving, so it rewards careful use.
