Collection: Chinese Cleaver

The Chinese cleaver (chuka bocho in Japanese) is the tall rectangular knife used across Chinese kitchens. Despite the name, most are slicers rather than bone choppers: they slice vegetables and meat thinly, scoop ingredients straight off the board, and smash garlic and ginger with the flat of the blade.

Japanese makers forge them thinner and harder than most cleavers, so keep them away from bones and frozen food.
