Collection: Petty Knife & Paring Knife-Utility

The petty (from the French "petit") is the Japanese utility knife, usually 120 to 150mm, with paring knives shorter still. It handles the small jobs where a big blade gets in the way: peeling, trimming, fruit, garlic, shallots, herbs and in-hand work.

A petty is the most common second knife in a kitchen, and the natural partner to a gyuto or santoku.

Smaller knives are handy to use for a variety of applications, such as peeling vegetables and fruits.
