Tsuchinone is the workshop Mutsumi Hinoura opened in late 2025. Mutsumi-san is the fourth generation of the Hinoura family of blacksmiths in Niigata and the son of the renowned Tsukasa Hinoura. After making his name as Mutsumi Hinoura, he now forges under his own workshop's name, including the Hagokoro range.
His knives carry the qualities he is known for: precise heat treatment, refined finishing and outstanding cutting performance.
Crafted from Blue Super (Aogami Super) steel, the top grade of Hitachi's Blue Steel family of Japanese carbon steels. Its higher carbon content, with added tungsten, chromium, molybdenum and vanadium, lets it reach a very high hardness and hold a keen edge for longer than Blue 1 or Blue 2, while still sharpening well on whetstones. As a carbon steel it is not stainless, so wipe it dry after use and keep it lightly oiled to prevent rust.
