Amazing knife!
This is everything I had hoped it would be. Slices like a dream. The hype about how good Japanese knives can be is the reality. I'm trying to find reasons to cook more complicated food, just so I can spend more time cutting with this knife. Amazing product and brilliant service from the whole team at the store.
Is this the perfect knife?
All signs point to yes. At 146g, its ultra sharp edge cuts swiftly and with ease, the handle is superb, and I expect with care and attention this masterful union of wood & steel will exceed my lifetime... blessed are the next generation's hopes to acquire such a prize!
