Touroku Sakai
Led by its third-generation owner, Touroku Sakai is dedicated to uniting Japan’s most skilled craftsmen and sharing their artistry with the world. Drawing on decades of expertise and deep-rooted passion, the company collaborates with makers from across Japan to offer truly authentic Japanese knives. At Japanese Knife Studio, we are proud to present this carefully curated collection from Touroku Sakai to our customers.
Tadataka Maruyama, former head sharpener of HADO, now runs his own workshop under Enjiki Knives. He works closely with our partner Touroku Sakai, collaborating on the development of several unique knife lines to be released in the future.
After years of rigorous training under a master sharpener in Sakai, Japan, Maruyama-san developed a deep understanding of edge geometry and performance. His influence shaped HADO’s sharpening philosophy—knives that arrive exceptionally sharp, maintain edge longevity, and deliver a smooth, precise cutting feel. His work is defined by thoughtful geometry and a cutting performance that stands out even among top-tier Japanese knives.
