Matsubara Knives are crafted by Katsuto Tanaka (4th generation Blacksmith) and his son Hiroki Tanaka (5th generation). This family operated workshop is based in the city of Omura, in the prefecture of Nagasaki, and draws from traditional forging methods that trace back over 500 years to the sword-making heritage of the region. 
The Tanaka family shows their interest in pushing their craft further, by working with both the classic paper steels (Aogami, Ginsan, ...) and with modern PM steels such as HAP-40 and ZDP-189. The in-house operations are not limited to the forging and heat treatment of the blades, the grinding and sharpening of each knife is also done at the workshop. Katsuto-san and Hiroki-san also take special care in listening to the end users of their knives, for example by making tall profiles due to the popularity and desirability of this feature.
