Ino Chu
Ino Chu is the family workshop of the Ino family, a prominent family of sharpeners in Sakai who have been sharpening high quality knives for decades, including Honyaki made by famous makers such as Ikeda Yoshikazu and Ikeda Tatsuo. Over its history the workshop has seen famous sharpeners being trained like Ino Shinpei-san and even Nomura Shotaro-san (currently the oldest active knife craftsman in Sakai). Nowadays, the head sharpener is master Ino Hideki-san, who mastered both traditional convex (hamaguri) and wide-bevel (« shinogi style ») sharpening. Japanese Knife Studio is honoured to feature the exquisite masterpieces crafted by Ino-san.

To have a chance holding this knife and working with it, I can feel the skill and dedication it took to finish this masterpiece. Everything about this knife is perfect, the sharpness, the cutting geometry and most of all, the aesthetic. It is humble at the look but extraordinary at performance.
