The Myojin SG2 Kasumi Kiritsuke Gyuto (Japanese Knife Studio) is, simply put, phenomenal. Myojin is a legendary sharpener and the blade is a testament to his skill. It's pretty tall, which helps for slicing through thick vegetables, but not at all heavy. In fact, it feels effortless. The kasumi finish is exceedingly well done and the lacquered handle is superlative. Surely one of the nicest knives I own - the rest are carbon steel. Balasz at JKS is a joy to work with. He was exceedingly helpful in making my selection and stayed in close contact while we were waiting for the order to arrive from Jpan.a
