Knife Sharpening in Brisbane: How Our Service Works

We are Japanese Knife Studio, a knife retailer and dedicated sharpening workshop in the Brisbane CBD, and sharpening is not a side service for us. It is the heart of the shop.

Who does the sharpening

Every knife is sharpened by hand on Japanese whetstones by Balazs, who spent twenty years as a chef before moving behind the stones full time. No pull-through machines.

What we sharpen

  • Japanese kitchen knives, double and single bevel, including yanagiba, deba and usuba
  • Western chef's knives and everyday kitchen knives of any brand
  • Kitchen Knives with chips, broken tips and rolled edges, which we repair as part of the work
  • Blades that have grown thick behind the edge over years of sharpening, which we thin so they cut like they used to

What happens to your knife

  1. Assessment. We check the edge, the geometry and the handle, and tell you what the knife needs before any work starts.
  2. Repair, if needed. Chips and broken tips are ground out on coarse stones while keeping the original profile of the blade.
  3. Sharpening. The edge is reset on medium stones and refined on fine stones, matched to the steel and how you use the knife.
  4. Finish and check. Deburring, a clean wipe-down, and a cut test before it goes back in your hands.

Where and when

The studio is at Lot 10, 198 Adelaide Street, Brisbane City, a short walk from Central Station. Hours: Monday to Thursday 10am to 5pm, Friday 1pm to 5pm, Saturday 11am to 5pm, closed Sunday.
