Sukenari, a small artisan knife maker located in Toyoma city, Japan, was founded in 1933 and gained renown throughout Japan for its expertise in Honyaki forged knives, which employ one of the most challenging forging techniques known for its hardness. Currently led by the third-generation craftsman, Mr. Nobuo Hanaki, Sukenari remains dedicated to advancing the art of chef knives while upholding the finest traditions of Japanese knife craftsmanship. Today, Sukenari is celebrated for its craftsmanship with a variety of super steels, further solidifying its reputation as a leader in the field of high-quality kitchen knives.

ZDP 189 steel

ZDP-189 steel stands out as a highly advanced material crafted by Hitachi, renowned for its extraordinary hardness and prolonged sharpness retention. Composed with significant carbon (around 3%) and chromium (approximately 20%), this stainless steel achieves exceptional levels of durability and resistance to corrosion.

Knives made from ZDP-189 can reach remarkable hardness levels, often measuring between 65 and 67 HRC on the Rockwell Hardness Scale.
