ZDP 189 steel
ZDP-189 steel stands out as a highly advanced material crafted by Hitachi, renowned for its extraordinary hardness and prolonged sharpness retention. Composed with significant carbon (around 3%) and chromium (approximately 20%), this stainless steel achieves exceptional levels of durability and resistance to corrosion.
Knives made from ZDP-189 can reach remarkable hardness levels, often measuring between 65 and 67 HRC on the Rockwell Hardness Scale. This characteristic ensures they maintain a keen edge for extended periods, making them particularly sought after by professionals and enthusiasts who demand reliable cutting performance.
However, the steel's hardness also presents challenges when it comes to sharpening. Achieving optimal sharpness requires skill and the use of high-quality sharpening tools, such as diamond abrasives or premium ceramic stones. Despite the higher cost associated with these knives due to the material's properties and manufacturing complexity, their exceptional performance and longevity justify the investment for those who prioritize superior cutting capabilities.
